WHAT USDA ORGANIC CERTIFICATION ACTUALLY COVERS

THE TWO VARIABLES THAT ACTUALLY DETERMINE WHAT IS IN THE BOTTLE
Two things determine polyphenol content more than anything else.
Pressing speed. The faster olives go from tree to press, the more polyphenols survive. Pressing within four hours of harvest is at the fastest end of what is practically possible. Pressing within 24 hours is better than most. Pressing at 48 hours or longer means starting at a fraction of the polyphenol potential that was in the fruit. This is rarely on the label. You have to look for producers who publish it, or ask directly.
Harvest timing. Early harvest olives, picked before full ripeness, contain significantly higher polyphenol concentrations than olives left on the tree until they are fully ripe. WHAT TO LOOK FOR ON THE LABEL
Most olive oil labels are built to suggest quality without committing to anything specific. Here is what to actually look for, in order of what it tells you.
Pressing speed. Does the producer say how quickly they press after harvest? This is not on the bottle in most cases. Look for it on the brand website or in marketing materials. Producers who press within hours say so, because it is a meaningful differentiator. Producers who do not publish a pressing time are almost certainly on a slower timeline.
USDA Organic seal. The actual seal, not the word "organic" used as a descriptor. The seal requires annual third-party inspection. The word alone requires nothing. The distinction between certified and uncertified organic claims is worth understanding before you buy.
Dark glass packaging. Light degrades polyphenols steadily after bottling. An oil in clear glass or plastic has been losing polyphenol content since the day it was filled, regardless of how well it was made. Dark glass is not a premium feature. It is basic quality protection.
Single origin with a named region or variety. An oil that names a specific place or olive variety is traceable. A multi-country blend tells you as little as possible about what is in the bottle.

WHY MOST ORGANIC OLIVE OIL STILL DISAPPOINTS
Most olive oil on grocery store shelves, organic or not, has lost most of its polyphenols before it reaches your kitchen. The UC Davis Olive Center tested imported extra virgin olive oils from major California retailers in 2011 and found that a majority failed the chemical or sensory standards required to qualify as extra virgin. These were not obscure brands.
The problem is the supply chain. Olive oil is pressed in the fall in the Mediterranean, shipped internationally over weeks, warehoused, distributed, and then sold from a shelf where it may sit for months more. The answer depends on what you are optimizing for.
