WHAT USDA ORGANIC CERTIFICATION ACTUALLY COVERS
The USDA National Organic Program (NOP) sets the federal standards for what can be labeled organic in the United States. For olive oil, certification means the following requirements were met and verified annually by an accredited third-party inspector.

HOW THE CERTIFICATION WORKS FOR IMPORTED OLIVE OIL
Most olive oil sold in the United States is imported, primarily from Spain, Italy, Greece, and Turkey. WHAT ORGANIC CERTIFICATION DOES NOT COVER
This is where most shoppers' assumptions about the organic label diverge from what it actually tests.
Polyphenol content. The USDA NOP does not test for or set minimum standards for polyphenol content. An olive oil can be 100% certified organic and contain essentially no hydroxytyrosol, oleocanthal, or oleuropein. Extra virgin grade. Organic and extra virgin are completely separate designations. Extra virgin is a quality and chemical grade. It requires free fatty acidity below 0.8%, a peroxide value below 20 meq/kg, and sensory quality confirmed by a trained panel. An oil can be certified organic but not extra virgin, and vice versa.

Freshness and harvest timing. Organic certification sets no requirements for how quickly olives must be pressed after harvest. Olive oil pressed from olives that sat in collection bins for days can hold its organic certification while losing most of its polyphenol content.

For most shoppers buying olive oil for health reasons, the answer is yes, though not for the reasons the label implies.
The clearest case for organic is pesticide avoidance. The olive fruit fly is the primary pest in Mediterranean olive cultivation, and conventional growers use synthetic insecticides including dimethoate, imidacloprid, and cypermethrin to manage it.

DOES OLIVE OIL NEED TO BE ORGANIC?
