The Smoke Point Confusion

Smoke point is one of the most misunderstood concepts in cooking. Many people assume that once an oil starts smoking, it instantly becomes unhealthy. The reality is more nuanced — and for olive oil, the news is better than most people expect.

Premium extra virgin olive oil has a smoke point of approximately 190–210°C (374–410°F). This is higher than most home cooking temperatures. A typical home sauté runs at 120–170°C. The Finding Most People Have Never Heard Of: Polyphenols Move Into Your Food

A study published in PMC found something that reframes the whole "cooking destroys polyphenols" concern. When vegetables are cooked in extra virgin olive oil, polyphenols from the oil transfer into the vegetables. The vegetables are enriched with the oil's antioxidants during cooking.[2]

What this means practically: when you measure polyphenol content in the oil after cooking vegetables in it, the number drops — not just because heat degraded the polyphenols, but because the food absorbed them. They did not disappear. They moved.

The same research also found the reverse: some polyphenols from the vegetables transfer into the oil, adding compounds that are not naturally found in extra virgin olive oil (EVOO). Cooking vegetables in olive oil enriches both the oil and the food with a broader range of beneficial compounds than either would contain on its own.

What Survives Heat Almost Completely

Oleic acid

Raw use — drizzling, dressings, dipping
