What Does 'Cold Pressed' Actually Mean? A Precise Technical Explanation

'Cold pressed' appears on olive oil bottles in every grocery store. It sounds rigorous — like a precise quality guarantee. In reality it is one of the most loosely used terms in the food industry, and in the United States it has no legal definition at all.
That does not mean it is meaningless. In regions where it is regulated, cold pressed refers to something real and technically specific. But the gap between what the label implies and what it actually guarantees is wide — and understanding that gap is the difference between choosing oil based on marketing and choosing it based on what actually matters.
This post explains what cold pressed means technically, how olive oil is actually made today, why temperature matters for quality, and what the term tells you (and does not tell you) about what is in the bottle.
How Olive Oil Is Actually Made: The Modern Process
To understand what cold pressed means, you first need to know what happens in a modern olive oil mill. The process has four stages, and temperature plays a role at every one of them.
Stage 1: Crushing
Whole olives — pits included — are fed into a crusher that breaks them into a coarse paste. Modern mills typically use stainless steel hammers or discs rather than the traditional stone wheels you see in photographs. The crushing is fast and mechanical. The olive cells rupture, releasing oil droplets, water, and cellular material in a mixed paste.
Stage 2: Malaxation
This is the stage most people do not know about, and it is the most important one for understanding cold pressing.
Malaxation is the slow kneading of the olive paste. The crushed paste moves into a horizontal mixing tank and is gently churned — typically for 20 to 45 minutes. The purpose is to allow the tiny oil droplets released during crushing to find each other and merge into larger droplets that can be separated more easily. Without malaxation, most of the oil would remain trapped in the paste.
Here is the catch: oil merges and separates more efficiently at higher temperatures. Heat reduces the thickness of the oil and makes the paste easier to work with. A malaxer running at 35 degrees Celsius will produce meaningfully more oil from the same amount of olives than one running at 22 degrees. This is why many producers raise the temperature during this stage — yield goes up, and yield is directly tied to revenue.
Malaxation temperature is the single most consequential decision in olive oil production for quality vs. yield. Higher temperature means more oil out of the same olives but lower polyphenol content in that oil. Lower temperature means less oil but higher quality.
Stage 3: Centrifugal Separation
After malaxation, the paste goes into a horizontal centrifuge called a decanter. Spinning at roughly 3,000 to 3,600 rotations per minute, it separates the paste by density into three streams: oil, water, and solid waste (called pomace). In a two-phase system, the water stays with the pomace; in a three-phase system, all three exit separately.
A vertical centrifuge may follow to remove any remaining water from the oil. The oil is then stored in temperature-controlled stainless steel tanks, typically under nitrogen gas to prevent oxidation, until it is bottled.
Stage 4: Bottling
The finished oil is filtered or left unfiltered and bottled. The packaging choice — dark glass, tin, or clear plastic — affects how quickly the oil degrades after bottling. Light is one of the primary causes of polyphenol breakdown in stored oil.
What 'Cold Pressed' Technically Means
The regulated definition of cold pressed in the European Union — the most rigorous labeling standard for olive oil in the world — ties the term directly to the temperature during malaxation and centrifugal extraction.
Under EU regulation, the term 'first cold pressing' may appear only on oil extracted using traditional hydraulic presses at temperatures below 27°C (80.6°F). The term 'cold extracted' applies to oil produced through modern centrifugal systems at the same temperature threshold. Both refer to the same underlying requirement: at no point during the malaxation and extraction process did the temperature exceed 27 degrees Celsius.
27°C / 80.6°F is the official temperature ceiling. Above that threshold, neither 'cold pressed' nor 'cold extracted' can legally appear on a label in the EU. The limit exists because above this temperature, polyphenol degradation accelerates significantly.
In the United States, the term has no equivalent federal standard. The USDA has established voluntary olive oil grades, but 'cold pressed' is not defined or enforced by any federal agency. A US producer can print it on any bottle without verification.
The International Olive Council, which sets global standards that many countries adopt, defines cold extraction in a way consistent with EU rules — below 27°C, modern centrifugal systems. But IOC standards are only binding in member countries that have adopted them into national law. The US has not.
Why Temperature Matters: What Heat Does to Olive Oil
The 27°C threshold is not arbitrary. It reflects real changes in oil composition that happen as extraction temperature rises.
Polyphenol Degradation
Polyphenols — the compounds responsible for olive oil's bitterness, pepper finish, antioxidant activity, and most of its documented health effects — are temperature-sensitive. A study on malaxation conditions and phenolic content found that increasing extraction temperature beyond 27°C measurably reduced the phenolic concentration in the finished oil. The relationship is not perfectly linear, but the direction is consistent: more heat, fewer polyphenols.
Research testing low-temperature malaxation specifically found that keeping the paste below 27°C during the entire extraction process preserved significantly higher concentrations of key phenolic compounds — including oleuropein derivatives and hydroxytyrosol — compared to warmer extraction in the same facilities using the same olives.
Aroma and Volatile Compounds
The fresh, grassy, slightly fruity notes in high-quality extra virgin olive oil come from volatile aromatic compounds that form when olive cells are ruptured. These compounds are especially fragile at higher temperatures — they evaporate or break down during a warm malaxation. Cold extraction preserves them. This is one reason why genuinely cold-pressed oil smells different from oil produced at higher temperatures.
Oxidation Rate
Heat accelerates oxidation — the process that makes fats go rancid. Oil extracted at lower temperatures has a lower initial oxidation level. Since EVOO grade requires peroxide values below 20 milliequivalents per kilogram (a measure of oxidation), oil produced more carefully tends to stay within grade longer and has a longer useful shelf life once opened.
'First Cold Pressed' vs. 'Cold Extracted': What the Distinction Means
You will see both terms on bottles. They sound like one is better than the other. The truth is simpler.
'First cold pressing' refers to traditional hydraulic press systems where olives are pressed through mats stacked under a press. These are largely historical now — most producers converted to centrifugal systems decades ago because they are faster, more consistent, and easier to clean.
'Cold extracted' refers to the modern centrifugal process. Under EU rules, if the centrifuge ran at or below 27°C, the producer can use 'cold extracted.' If they are using a traditional press and kept temperature below 27°C, they can say 'first cold pressing.'
Neither term is inherently superior. Both require the same temperature threshold. 'First cold pressing' on a modern bottle often just means the producer prefers the traditional-sounding language — the oil almost certainly came out of a centrifuge. The temperature is what matters, not the phrase.

Here are the situations where the label tells you nothing useful.
In the United States, Always Verify
Because the US has no legal definition for cold pressed, it can appear on any bottle. A refined olive oil — stripped of polyphenols through heat and chemical processing — could technically be labeled cold pressed in the US with no consequence. Most won't, because it would be obviously misleading, but the absence of regulation means the term carries no guarantee.
When the Temperature Was 27.1 Degrees
The EU threshold is a cliff, not a gradient. An oil malaxed at 28°C does not qualify for the cold extraction label — but it is also not dramatically different from one at 26°C. The 27°C threshold is a regulatory line that happens to sit near where polyphenol degradation becomes meaningful, but the relationship between temperature and quality is a curve, not a step. Some producers who can legally use the label ran their malaxers at 26.9°C. Others who cannot used 27.5°C. The regulatory line is not where polyphenol loss starts — it is where it becomes consistent enough to enforce. When Other Process Variables Undermine It
Cold pressing is one variable. The temperature control during malaxation is important, but it doesn't override the others: how long after harvest the olives sat before pressing, whether the olives were damaged or overripe at the time of crushing, how long the oil has been stored, or whether it's been packaged in a way that protects it from light.
An oil that was cold pressed but stored in a clear glass bottle for 18 months before reaching the shelf has lost most of its polyphenols regardless of what the label says. What to Look for Instead
If cold pressed doesn't tell you enough on its own, what does?
• How quickly the producer presses after harvest — this is the signal most labels hide.
