The price gap between these grades is significant. The temptation to take refined or lampante oil, add a small amount of genuine EVOO for color and flavor, and label the result as extra virgin has driven fraud at the producer and importer level for generations. The resulting product will often pass a cursory label inspection but will fail chemical testing and sensory evaluation by trained tasters.
Deodorizing old or rancid oil
Olive oil goes stale. Polyphenols and aromatic compounds degrade over time, and exposure to light and heat accelerates the process. Rather than disposing of this oil, some producers and traders run it through a deodorizing process — using steam and heat to strip out the off-flavors — and then sell it as fresh, high-quality oil. Country of origin mislabeling

What Extra Virgin Actually Requires

On the chemical side, extra virgin oil must have a free fatty acid content below 0.8 percent, a peroxide value below 20 milliequivalents per kilogram, and specific UV absorbance values within defined ranges. On the sensory side, extra virgin oil must have detectable fruitiness and no sensory defects. The Part the Label Does Not Tell You

What Genuine Olive Oil Actually Costs
Price is not a perfect indicator of quality, but it is a meaningful signal in olive oil because real quality has a real cost floor.
Producing genuine extra virgin olive oil at meaningful polyphenol levels requires early-harvest olives (which yield less oil per tree than fully ripe fruit), fast pressing after harvest (within hours, not days), careful temperature control during pressing, and proper storage and bottling. These things cost money. Skipping any of them reduces cost — but also reduces quality.
When a large bottle of olive oil labeled extra virgin is priced at the level of generic cooking oil, the economics do not add up. At that price point, the margin for a genuine product is essentially zero. This does not mean that expensive automatically means good. Look for dark glass
Polyphenols and flavor compounds degrade with light exposure. Producers who care about what is in the bottle put it in dark glass — usually green or amber.
