WHAT THE RESEARCH HAS FOUND

The most significant human data on olive oil and bone health comes from the PREDIMED trial, one of the largest and longest-running Mediterranean diet studies ever conducted. PREDIMED followed more than 7,000 adults at elevated cardiovascular risk over several years. The trial was primarily designed to study heart outcomes, and those results, published in the New England Journal of Medicine, showed major reductions in cardiovascular events for the Mediterranean diet groups. In a subset of the participants, those who ate extra virgin olive oil showed improvements in blood markers that doctors use to track bone health compared to the low-fat diet group. WHY MOST OLIVE OIL WILL NOT GIVE YOU THIS BENEFIT

Everything above depends on the oil actually containing the polyphenols researchers are studying. Most olive oil you can buy does not.

A 2011 study by the UC Davis Olive Center tested bottles of imported olive oil labeled as extra virgin and found that a majority failed either the chemical or sensory standards for the grade. These bottles were sold as extra virgin, which means buyers had no way to know they were getting something with a fraction of the polyphenol content they thought they were purchasing.

Even among oils that genuinely qualify as extra virgin, polyphenol levels vary enormously. The reason is what happens inside the olive after it is picked. This is why pressing speed matters more than almost any other production variable. An oil pressed within four hours has lost very little to enzymatic degradation. The olive variety is also a factor. Some cultivars produce naturally higher oleuropein concentrations than others. This is determined by genetics, not by how the oil is made.
