Olive Oil Grades Explained: Extra Virgin, Virgin, Refined, and Pomace
Walk down the cooking oil aisle and you will see bottles labeled extra virgin, pure, light, and pomace. Almost none of them explain what the grade actually means.

WHY OLIVE OIL GRADES EXIST
Olives are a fruit. Like any fruit, the oil they produce changes depending on how healthy the olive was, how long it sat before being pressed, and what happened to it during processing. Not every batch of pressed olives produces clean, great-tasting oil. Grades exist to tell the buyer what they are actually getting.
The International Olive Council sets the global standard. The European Union and the USDA both use IOC-aligned criteria. Each grade has a maximum free fatty acid level, rules about how the oil was processed, and, for the top two grades, a required sensory evaluation.
Free fatty acid content, which is what people mean when they say acidity, does not make olive oil taste sour. It measures how much the fat molecules in the olive had already broken down before pressing. When olives are healthy and pressed quickly, the fats stay intact. Sensory testing adds a second check. A trained tasting panel evaluates every candidate for the top two grades. They look for positive characteristics: fruitiness, bitterness, a peppery finish. They also screen for defects like rancidity, mustiness, or a fermented smell. If those defects are detectable, the oil cannot be graded extra virgin no matter what the acidity number says.
The acidity number tells you how the olive was treated before pressing. The sensory test tells you whether it produced oil worth tasting.
EXTRA VIRGIN OLIVE OIL
Extra virgin olive oil is the highest grade. To earn it, the oil must meet three requirements at once:
1. Free fatty acid content below 0.8%
2. A passing score from a trained sensory panel, meaning no detectable defects
3. Cold processing only, no heat or chemical solvents used at any point
The third requirement is the one most people overlook. Extra virgin is not just about low acidity. It is also about how the oil was made. No chemicals. No industrial solvents. No heat used to squeeze more oil out of the paste. The oil has to come out clean through mechanical pressing alone.
The flavor should be unmistakably olive. Some fruitiness on the nose. Bitterness on the palate. A peppery burn in the back of the throat, especially in fresh or high-polyphenol oils. Those sensations are not defects. They are exactly what you want. They come from polyphenols, the antioxidant compounds responsible for most of the health research behind olive oil.
A major randomized trial published in the New England Journal of Medicine followed more than 7,000 people and found that those consuming extra virgin olive oil as part of a Mediterranean diet had significantly lower rates of major cardiovascular events compared to those on a low-fat diet. The polyphenol content of true extra virgin olive oil is central to those findings.
The European Food Safety Authority also issued a specific health claim recognizing that olive oil polyphenols contribute to the protection of blood lipids from oxidative stress. That claim only applies to oils with meaningful polyphenol content, which means genuine extra virgin.
There is a real problem with this grade, though. The label is not enforced. A 2011 study by the UC Davis Olive Center tested 186 samples of imported extra virgin olive oil sold in California and found that a majority failed either sensory or chemical standards for the extra virgin grade. The label is a starting point, not a guarantee.
When to use it: Extra virgin is the right choice for almost everything. Use it raw for drizzling over finished dishes, dipping bread, or taking a daily spoonful. Use it for cooking at home, sautéing, roasting, and making dressings. The polyphenols provide some heat stability, and the flavor improves anything it touches. VIRGIN OLIVE OIL
Virgin olive oil sits one step below extra virgin. Like extra virgin, it is cold-pressed from fresh olives with no chemical processing. The oil is real, unrefined, and mechanically extracted. The difference is that the sensory panel detected one or more minor defects, and the acidity ceiling is higher, up to 2% instead of 0.8%.
What counts as a minor defect? A faint hint of mustiness, a slight fermented note, a trace of rancidity. Not enough to make the oil unpleasant, but enough to disqualify it from the extra virgin category. The defects usually reflect olives that were slightly less fresh or handled less carefully. The oil is not damaged. It just missed the tighter standard.
Virgin olive oil is far less common on supermarket shelves than extra virgin. When you do find it, it will typically cost less. It is still an honest, unrefined product with more character than anything in the refined category below it.
When to use it: Virgin olive oil works well for everyday cooking where the oil goes into a hot pan or gets mixed with other ingredients. Sautéing vegetables, making marinades, building salad dressings where you want less intensity. Virgin olive oil is still cold-pressed and unrefined. The gap from extra virgin is real, but it is a quality gap, not a safety one.
REFINED OLIVE OIL
Refined olive oil starts as low-quality material that could not pass the sensory test for virgin or extra virgin. In some cases it begins as lampante olive oil, a below-grade category not legally permitted for human consumption without industrial treatment. That raw material goes through a series of processing steps: deacidification to lower the free fatty acid level, bleaching to remove color and off-flavors, and deodorizing to eliminate any unpleasant smells. The result is an oil that is pale, neutral, and odorless.
The refining process solves the quality problem on paper. The acidity drops below 0.3%. The defects disappear. But so does almost everything that made the oil worth using in the first place. Polyphenols are removed in the process. The antioxidants that contribute to cardiovascular health research are gone. What remains is a largely neutral fat with the fatty acid profile of olive oil but without its beneficial compounds.
Refined olive oil is frequently blended with a small amount of virgin or extra virgin olive oil to add back some color and a trace of flavor. That blended product is then sold as "olive oil," "pure olive oil," or "light olive oil." The word light refers to the flavor profile, not the calorie count. Calorie content is essentially the same as extra virgin.
When to use it: Refined olive oil is best suited for high-heat cooking where you want a neutral fat with a relatively high smoke point. Commercial kitchens use it for frying because it is inexpensive and does not burn as quickly as butter. POMACE OLIVE OIL
After olives are pressed, a dense paste called pomace remains. This paste still contains residual oil, but not enough to extract by pressing alone. Pomace oil production uses chemical solvents, most commonly hexane, at high temperatures to pull the remaining oil out of the paste. The crude oil that results is then refined using the same deacidification, bleaching, and deodorizing steps as regular refined olive oil.
The finished product is very neutral in flavor, very pale in color, and very low in polyphenols. It has a high smoke point, which makes it useful for industrial deep frying. In some markets it is also used in cosmetics and soap manufacturing.
Pomace oil is rarely sold at retail in the United States. When you do encounter it, the label will say olive pomace oil clearly, because it is required to. The IOC and EU both prohibit it from being labeled simply as olive oil. It is technically derived from olives, but the oil has been so thoroughly processed that calling it olive oil in the traditional sense would be misleading.
When to use it: Pomace olive oil is primarily an industrial product. Most home cooks will never need it. If you see it at retail and want a very inexpensive, high-smoke-point fat for deep frying, it will work. It is not a substitute for extra virgin from a health or flavor standpoint.

WHAT TO LOOK FOR WHEN YOU BUY
If you are buying olive oil for your kitchen, extra virgin is the only grade worth considering for everyday use. The question is whether the bottle you are holding is actually extra virgin in practice, not just in name.
Pressing speed. The single biggest driver of quality is how quickly the olives went from tree to press. Once picked, olives begin to degrade. Most commercial operations press 24 to 72 hours after harvest. At that point, acidity has already risen, and polyphenol content has already begun to fall.
